Norcia and the "norcinerie"
A century-long tradition in pork meat treatment made the nursini, inhabitants of Norcia, famous around Italy for the delicacies they were able to create, literally: a work they jealously protected, the secrets of which have been handed down from father to son up to present times.
A refined alchemy still gives today the chance of measuring the Tantalus’ torment of these as such the best of the peasant’s produces of the land.
Norcia, at the foothills of the Sibillini Mountains, is the birthplace of Saint Benedict, whose influence in determining the role of the monks in the Western Church is still a key-point.
